Cheese Blintzes

Prepare a batch of crêpes first (you can make them before hand and refrigerate over night).

Ingredients

  • 2 pounds cream cheese
  • 2 pounds farmer’s cheese, shredded (may substitute shredded mozzarella)
  • 2 teaspoons vanilla extract
  • 1/4 cup lemon juice
  • 4 eggs
  • 1/3 cup matzo meal
  • A batch of crêpes.

Putting It Together

Pre-heat oven to 350F.

Mix all ingredients except for crêpes thoroughly in a large bowl. Spoon 2 tablespoons (or so) into center of each crêpe and roll like a burrito. Place stuffed crêpes into a 9″x13″ glass baking dish and bake at 350F for 30 minutes. Ensure that the middle crêpe is done (toothpick test should work). Serve hot with jams, jellies, or fresh fruit on the side.
